Scratch Cooking – Banana Pancakes

Once upon a time in America, meals made in the kitchen were made from scratch.  If you wanted butter, you churned it on your porch, if you wanted bread, you kneaded it by hand and if you wanted meat…well, that is a pretty dim tale that I won’t share here!  Anyway, today my kids asked for pancakes for breakfast, and they wanted to help…which is always fun!

In modern day america, we have a few “easy” choices for this type of request.  Pull a pre-made pancake out of the freezer, pour some mix out of a box or you go out to eat. None of these sounded appealing to me, so I did the unthinkable …I MADE pancakes from scratch.  Thanks to Pinterest, I discovered that this is actually a pretty easy thing to do!  In about 30 minutes, I was done and my family was chowing down!  So here it is…how to make some deliciousness for Saturday morning brunch:


Dry Ingredients:

1 1/2 Cups Flour (I use high-gluten flour for extra protein, but all-purpose is fine)

3 1/2 tsp Baking Powder (not soda!!)

1/2 tsp salt

1 TB sugar (i’m sure other sweeteners will work too with some experimenting)

1 TB Cinnamon

Wet Ingredients:

1 ripe banana smashed

1 egg

3 TB butter (melted and cooled to just above room temp)

1 1/4 cups almond milk

Combine dry ingredients – whisk or sift to fully combine them.  In a separate bowl, combine all wet ingredients (hold the banana) and whisk them together.  Add wet ingredients to dry ingredients, mix well.  NOW add the Banana.  mix again.

Prepare your skillet with either cooking spray, oil or butter.  Each of these options will produce a different texture to your pancakes.  Cooking spray will produce a softer pancake, oil will make the edges crispy and the butter will just make them delicious all the way around (my motto:  everything is better with butter!)
