Awesome Spring Pizza


I may haven mentioned before that I work for a food service company.  One of our chefs and I got into a debate about what constitutes a great pizza. I was shocked at his choice in pizzas.  I expected more from a chef.  I’m certain that his taste buds have been destroyed by years of cigarette smoking…there is really no other worldly explanation. How pizza with three inches of yeasty dough and smothered with high fructose corn syrup marinara sauce can be considered “great” pizza…I’m sure I don’t know. What I do know, is that a wood fired pizza is always the best, fresh ingredients are what make it great, and the crust should be crisp but not greasy.  That is a good pizza.

Because I have a young son at home, I don’t always have the luxury of going out for a really good pizza so I try and make some at home that is tasty, fresh and most times, healthy!

Here’s how it goes.  I buy a whole wheat pre-made crust and dress it up with some  combinations that you don’t see very often on a pizza.  In this experiment, I made two pizzas.  One was on the traditional side, the other, not so much.

Step 1 – brush the pizza crust with olive oil and sprinkle with garlic salt

Step 2 – Mash 1/2 an Avacado and spread it on one crust

Step 3 – Spread pizza sauce on the 2nd crust

Step 4 – Top the Avacado spread with a handful of chopped spinach, goat cheese crumbles, pesto and drizzle with olive oil.

Step 5 – Top the Tomato spread with finely chopped spinach, mushrooms and shredded mozerella cheese.

Step 6 – Place both pizzas on a pizza stone and put into a 425 degree oven for 10 minutes

Step 7 – Remove from oven and enjoy!!
